This Pad Thai from Nora Cooks Vegan was SO simple to make! When she says 30 minutes, she means it. What I love about this recipe is that you can put anything in there that you have lying around - I'm not a fan of tofu, so instead I added a pepper to bulk it up a bit. And, I did half zoodles/half noodles - trying to pack those veggies in any way I can. The sauce was delicious - salty, spicy from the Sriracha, with a tang from the lime. All topped off a nice crunch from the peanuts 🥜 & scallions. My taste buds were VERY (happily) confused!
