I've been saying it since the day I turned Vegetarian - the meal I miss the most is Chicken Salad. So, when I found this meatless replica from The Simple Veganista, I was a happy lady. It has all the yummy components that make chicken salad so tasty - a creamy base, the crunch of walnuts, celery and apple chunks, scallions, and of course, dried cranberries. As I'm writing this I'm wondering if some halved grapes would be a good addition as well...💭
There are so many ways you can eat this - by itself, in a lettuce wrap, in a sandwich, or over crackers (Triscuits are my favorite because they are so filling and have minimal ingredients).
