Living in the North End - I am around Italian food all day, every day. I could eat it EVERY night. Regina's Pizza? Sure. A veggie sub from Monica's? Yes please! But, we all know that's not PLANT BASED eating, so I decided it was time to get creative with some homemade Italian comfort food that fit into my diet. It took me a LONG time to find a recipe that didn't use tofu in the "Ricotta." I finally found this version from Nutrition in the Kitch, and it did not disappoint! I cut the recipe in half and had leftovers for almost the whole week. The "Ricotta" was creamy and delicious, and the layers will full of good-for-you veggies. I can't wait to make this again!
